*Vegetarian *Gluten Free *Dairy Free
- 1 large sweet potato, sliced
- 2 tbsps extra virgin olive oil
- 2 pinches sea salt
- 2 pinches cracked black pepper
- 2 pinches paprika
- 2 eggs
Preheat oven to 200°C.
Slice sweet potato (skin on) into fries and place on a baking tray covered with baking paper.
Drizzle with olive oil, salt, pepper and paprika. Place in oven for 20-30 minutes or until desired crispiness.
Boil a pan of water and boil eggs for 5-8 minutes dependant on desired yolk texture.
Peel the shells off, brush with the olive oil and roll in a plate of dukkah.
